
Flax Seed Muffins are a great kid friendly snack that is low in sugar and high in fiber. I usually make a double batch because my kids enjoy them so much!
We like to keep muffins on hand for a quick snack, an easy add on to breakfast or a side for soups.

Why flaxseeds?
Flaxseeds contain omega 3s, dietary fiber, protein and iron. Not only are they packed full of nutrients, but they are also a great binder in muffins. Without the use of gluten in baked goods, it’s difficult to make breads and muffins that aren’t a crumbly mess. Using flaxseeds really helps in binding the ingredients together and making them super healthy at the same time.

How do I grind flaxseeds?
I use a spice grinder to grind my flaxseeds, but a blender would also work. If you have any way to grind it yourself, you can buy ground flax seeds at most grocery stores. I prefer the golden flaxseeds/flaxmeal because the flavor is more mild and it’s less noticeable in baked items.

How do I make flax muffins?
- Preheat the oven to 350
- line your muffin tin with liners. Set aside.
- Combine the wet ingredients into a bowl.
- Mix the dry ingredients together and mix with the wet ingredients
- Add raisins (opt)
- Fill muffin liners with the batter
- bake for approx 15-18 minutes until baked through
- enjoy!

If you’re not able to enjoy these within a week, keep in the freezer to thaw out for an easy snack on the go!

Gluten-Free Flax Muffins
Ingredients
- 2 eggs
- 1/2 cup buttermilk
- 1 cup gluten free flour
- 1/2 cup ground flax I prefer golden
- 1/2 tsp soda
- 1.5 tsp baking powder
- 1/3 cup coconut sugar
- 1 tsp cinnamon
- 3 tbsp avocado oil
- 1/2 tsp salt
- 1/2 cup raisins opt.
Instructions
- Preheat oven to 350
- Line muffin tin with liners or lightly grease them. Set aside
- Whisk eggs, buttermilk and oil until combined.
- Mix remaining dry ingredients in a large bowl. Add all ingredients together and mix until combined.
- Divide batter evenly into muffin liners.
- Bake for 15-18 minutes or until a toothpick comes out clean.
