Gluten-Free Flax Muffins

Ingredients

  • 2 eggs
  • 1/2 cup buttermilk
  • 1 cup gluten free flour
  • 1/2 cup ground flax I prefer golden
  • 1/2 tsp soda
  • 1.5 tsp baking powder
  • 1/3 cup coconut sugar
  • 1 tsp cinnamon
  • 3 tbsp avocado oil
  • 1/2 tsp salt
  • 1/2 cup raisins opt.

Instructions

  • Preheat oven to 350
  • Line muffin tin with liners or lightly grease them. Set aside
  • Whisk eggs, buttermilk and oil until combined.
  • Mix remaining dry ingredients in a large bowl. Add all ingredients together and mix until combined.
  • Divide batter evenly into muffin liners.
  • Bake for 15-18 minutes or until a toothpick comes out clean.
