Gluten Free Sausage Pasta

Ingredients

  • 1 lb Ground Sausage
  • 1 lb Gluten Free Penne Pasta*
  • 2 Tbsp Avocado Oil
  • 1 small onion
  • 2-3 cloves garlic
  • 1 cup heavy cream
  • 2-3 cups mixed baby greens or spinach heaping
  • 1/2 cup shredded parmesan
  • salt and pepper to taste

Instructions

  • Cook the gluten free penne pasta in a pot of salted boiling water according to package instructions
  • Heat oil in a pan, add diced onions and garlic.
  • Once the onions are partially cooked, add sausage. Cook until the sausage cooked through and is no longer pink.
  • Add cream and spinach. Cook until the spinach is wilted and cooked through.
  • Add parmesan cheese and stir in until melted. Salt and pepper to taste.
  • Add penne pasta to the sausage mixture.
  • Serve immediately.
