Cook the gluten free penne pasta in a pot of salted boiling water according to package instructions
Heat oil in a pan, add diced onions and garlic.
Once the onions are partially cooked, add sausage. Cook until the sausage cooked through and is no longer pink.
Add cream and spinach. Cook until the spinach is wilted and cooked through.
Add parmesan cheese and stir in until melted. Salt and pepper to taste.
Add penne pasta to the sausage mixture.
Serve immediately.
