Tasty Gluten-Free Granola

Ingredients

  • 4 cups gluten-free rolled oats
  • 1 cup walnuts chopped
  • 1 cup dried cranberries
  • cup chia seeds
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp salt
  • ¾ cup honey
  • ½ cup coconut oil

Instructions

  • Preheat oven to 350°
  • Line baking sheet with parchment paper
  • In a large mixing bowl, combine oats, nuts, fruit, seeds, salt, and cinnamon
  • In a saucepan on medium heat, melt coconut oil and honey together
  • Once melted, add vanilla, and pour over dry mixture in mixing bowl
  • Mix until evenly coated
  • Pour into prepared baking sheet and spread evenly
  • Bake for around 24 minutes. Stir once in the middle of the baking time.
  • Allow to cool completely and store in an airtight container.
