
You can’t beat a good chocolate chip cookie, especially if it’s gluten free!
These gluten free chocolate chip cookies are the perfect blend of chewy, and chocolatey. The best part is that nobody will guess that they are gluten free!

I used my fancy kitchen aid, but you can easily make this recipe will a hand held mixture or by hand.
Ingredients:
- Butter
- coconut sugar
- white sugar
- egg
- egg yolk
- vanilla
- gluten free flour – I used Flour Farm
- baking soda
- salt
- chocolate chips

Why Coconut Sugar?
Coconut sugar is unrefined sugar made from coconut. It is higher in nutrition and has less fructose than white sugar. The easiest substitute for this ingredient is brown sugar.

Gluten Free Chocolate Chip Cookies
Equipment
- hand mixer
Ingredients
- ¾ cup butter (1.5 sticks)
- ¾ cup coconut sugar (or brown sugar)
- ¼ cup white sugar
- 1 egg
- 1 egg yolk
- 1 tsp vanilla
- 2 cup gluten free flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees
- Cream together butter and sugars until smooth
- Beat in the egg and egg yolk until combined
- Mix dry ingredients together and add to the wet mixture. Mix until combined.
- Add chocolate chips to the dough.
- Scoop cookies onto a parchment lined cookie tray
- Bake for about 10-12 minutes in a preheated oven. Do not overbake!
