Gluten Free Chocolate Chip Cookies

Ingredients

  • ¾ cup butter (1.5 sticks)
  • ¾ cup coconut sugar (or brown sugar)
  • ¼ cup white sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 2 cup gluten free flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees
  • Cream together butter and sugars until smooth
  • Beat in the egg and egg yolk until combined
  • Mix dry ingredients together and add to the wet mixture. Mix until combined.
  • Add chocolate chips to the dough.
  • Scoop cookies onto a parchment lined cookie tray
  • Bake for about 10-12 minutes in a preheated oven. Do not overbake!
