Gluten Free Banana Bread

Equipment

Ingredients

  • cup gluten-free flour
  • 1 tsp baking soda
  • ½ tsp salt
  • cup coconut oil
  • ½ cup honey
  • 2 eggs
  • 1 cup mashed bananas (3 medium size bananas)
  • ¼ cup hot water
  • ½ cup chopped walnuts
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp cardamon optional

Instructions

  • Combine dry ingredients and set aside
  • In a blender, combine oil, honey, eggs, and bananas, and blend until smooth
  • Add blended mixture and hot water to dry ingredients
  • Stir until well mixed
  • Mix in walnuts
  • Pour into greased mini-loaf pans
  • Bake at 325° for 25-30 minutes, or until a toothpick comes out clean
  • Let cool before slicing
