
We eat a lot of bananas every week. I usually find myself making banana bread when I’ve collected a pile of brown ones that somehow not been eaten by my kids. Banana bread is a great kid-friendly snack. This recipe is low in sugar (no processed sugar, just honey), contains no dairy, and is gluten-free.
Ripe Bananas
Brown bananas make the best banana bread. When I say brown, the browner the bananas the better! It gives this bread the most wonderful banana flavor.
Dairy-Free
This recipe is naturally dairy-free because it does not include any dairy ingredients.

Blender Method:
Bananas are typically smashed with a fork, but I don’t like chunks of bananas in my bread (call me weird!). I much prefer to blend them in the blender to avoid any chunks in the finished bread. However, if you like your banana chunks in your bread feel free to use a fork instead of the blender. Using a blender also saves time and makes this suck a quick and easy recipe.

Add-ins:
There’s several options for add-ins in your banana bread. Chocolate chips are one common “add-in” ingredient. I usually opt to use them in at least one of my loaves. Nuts are the other common add in. Mix in with chocolate chips or just use nuts.

Gluten Free Banana Bread
Equipment
- Blender
Ingredients
- 1¾ cup gluten-free flour
- 1 tsp baking soda
- ½ tsp salt
- ⅓ cup coconut oil
- ½ cup honey
- 2 eggs
- 1 cup mashed bananas (3 medium size bananas)
- ¼ cup hot water
- ½ cup chopped walnuts
- 1 tsp cinnamon
- ½ tsp ginger
- ¼ tsp cardamon optional
Instructions
- Combine dry ingredients and set aside
- In a blender, combine oil, honey, eggs, and bananas, and blend until smooth
- Add blended mixture and hot water to dry ingredients
- Stir until well mixed
- Mix in walnuts
- Pour into greased mini-loaf pans
- Bake at 325° for 25-30 minutes, or until a toothpick comes out clean
- Let cool before slicing
