
We recently cooked up a pork shoulder in the instant pot for Sunday dinner. We ended up with tons of leftover meat that I was trying to figure out how to use.
And then it struck me, why not make nachos? These were absolutely amazing, and so easy to make! We ended up eating these Sunday evening and they were a hit with even my pickiest eaters

Serve with all your favorite nacho toppings – sour cream, salsa, guacamole and peperacini (or pickled jalepenos).


Shredded Pork Nachos
Ingredients
- 2 cup shredded pork
- 12 oz corn chips
- 1 can black beans
- 1 cup shredded cheddar cheese
Toppings:
- salsa
- peperoncini or pickled jalepenos
- guacamole
- sour cream
Instructions
- Preheat oven to 400°
- Place parchment paper on baking sheet
- Assemble your ingredients – chips, shredded pork, beans and then top with cheese
- Bake for 12-15 minutes in preheated oven
- Top with the toppings of your choice.
