
One of our Saturday traditions is whipping up a batch of these gluten free waffles for breakfast. What a great start to the weekend!
Now that I’m exploring the world of gluten-free sourdough I am so excited for easy recipes like this one.
After I tried these for the first time, I was absolutely hooked! They taste so amazing and even my husband can’t tell that they are gluten-free.

Did I mention that these are extremely easy to make? Just mix some ingredients together for the “overnight sponge” then simply add a few more ingredients in the morning and voila, you have homemade, delicious sourdough waffles for the whole family to enjoy!

Why buttermilk?
Buttermilk adds a delicious taste and great texture to gluten-free baked goods. If you don’t have any on hand, simply sub with watered down yogurt or 1 cup of milk and 1 tbsp of vinegar. Mix and let set for 10 minutes before using.

Ingredients
- Sourdough starter, active (gluten-free)
- Buttermilk
- Oat Flour {gluten-free}
- Flaxmeal
- Maple syrup
- Butter
- Eggs
- Salt
- Baking Soda

Make a double batch to freeze and reheat in the toaster for an easy, healthy breakfast on the go.

Overnight Sourdough Waffles {gluten-free}
Ingredients
Overnight Sponge:
- 1 cup GF Sourdough Starter* active
- 1 cup Buttermilk
- 1 cup Oat Flour make sure it's gluten-free
- 2 Tbsp Flaxmeal ground
- 1 Tbsp. Maple Syrup
Add in the Morning:
- 1/4 cup butter melted
- 2 eggs
- 1/2 tsp salt
- 1 tsp baking soda
Instructions
The night before:
- Mix sourdough starter, buttermilk, oat flour, flaxmeal and maple syrup until combined. Cover with a cloth and let sit on the counter for 8-12 hours – or overnight.
The next morning:
- Whisk together the butter and eggs. Add to the sponge.
- Sprinkle the baking soda and salt on top of the batter. Mix until incorporated.
- Preheat your waffle iron. Follow the instructions included with your waffle iron.
- Enjoy with berries, syrup and whip cream!
Notes:
- *Use an active gluten-free sourdough starter that is fed at least 8 hours beforehand
